When you walk into any restaurant or food service operation, there is one appliance that you are guaranteed to see and that is an oven, as 9 out of ten commercial kitchens use one.   • The pilot light is not staying on – this is usually caused by one of 2 problems, which is either a malfunctioning safety valve or thermocouple. This is definitely a repair issue that you should call a repairman to handle for you, but for safety and to give you peace of mind to know that it is done properly.
  • The Oven is cooking meals unevenly – in most cases this is due to a thermostat that was not installed properly, as it causes the temperature readings to be incorrect, which results in your food not being cooked evenly, which then causes unhappy patrons.
  • The oven is not getting hot enough – this is also a problem related to the thermostat, either it needs to be re-calibrated or you need to install a new one.

Preventative Maintenance For Commercial Oven Repair

Preventative Maintenance is required to keep your Commerical Oven in good working condition

Convection Ovens:

  • Clean exterior with a cloth and stainless steel cleaner. Dry with a clean cloth.
  • To clean interior, remove racks, rack supports and back panel. Soak parts  in a water and ammonia solution. Clean porcelain interior with commercial oven cleaner but do not allow cleaner to come in contact with temperature probe, heating element or blower wheel. Let cleaner sit 10-20 minutes then wipe clean with wet cloth. If you have caked on spills inside your oven, use an oven brush to thoroughly clean these spots.
